The chanterelle — known variously as gallinaccio, gialletto or galletto depending on the region — is Italy's most sought-after summer mushroom. Cantharellus cibarius fruits from June to October, with different peaks depending on altitude and forest type. It is one of the few species that tolerates moderate drought well, making it the mushroom to pick when conditions are not yet optimal for porcini. Its distribution is uniform across the whole country, from the hills of Tuscany to the fir forests of Trentino.

Habitat

Chanterelles prefer broadleaf forests — oak, beech, birch, chestnut — with moderately acid soil and good canopy cover. They avoid compact soils and waterlogged areas. The ideal habitat on the map reads as dense broadleaf cover between 300 and 1100 metres, with moderately sloping terrain and good east or north-east exposure.

How to identify chanterelles

  • Uniform yellow-orange colour on cap and stem
  • False gills (forked ridges running down the stem) — NOT true gills
  • Firm and elastic texture, not brittle
  • Characteristic fruity aroma, delicate
  • Growing on the ground, never on wood

Similar species — pay attention

Omphalotus olearius (jack-o'-lantern): grows on wood or roots, true gills (not false gills), no fruity aroma. Hygrophoropsis aurantiaca (false chanterelle): brighter orange, true closely-spaced gills, involute cap margin.
